Through science, technology, intellect, and meticulous care, Ratnagiri shows us that identity doesn’t merely lie dormant in the soil—it can shine when awakened by human hands and minds that dare to go beyond conventional boundaries.

Without further delay: Chandragiri LMF – 01 and Hemavathi RT – IOP 2 are the two special lots featured this month. Grown on the slopes of the Western Ghats, they carry the pure essence of their origin, gifted by both land and legacy.

CHANDRAGIRI LMF – 01: The Power of Indigenous Microbes and Thermal Control

Chandragiri LMF – 01 is a Specialty Coffee lot harvested in 2025, from the Chandragiri cultivar—a hardy local hybrid. Though once overlooked in terms of cup quality, this variety has been elevated to new sensory heights through the innovative craftsmanship of the Ratnagiri Estate team.

This lot’s processing method is a fusion of scientific precision and biotechnology applied to Specialty Coffee. The cherries undergo fermentation in their whole-fruit form for 48 hours, with the introduction of LAB (lactic acid bacteria) to guide the biochemical transformation and promote the development of complex organic acids.

During fermentation, a carefully controlled thermal shock is applied to break down the cellular walls of the fruit pulp. This enables enzymes to penetrate deeper into the coffee seed, enhancing the definition of its aromatic compounds.

Following fermentation, the coffee is dried in a dark room for 12 consecutive days. This steady, low-light environment helps minimize temperature fluctuations, ensuring consistent moisture removal and protecting delicate flavor compounds from oxidation.

Thanks to this high level of microbial and thermal control, Chandragiri LMF – 01 produces a cup with a rounded, full-bodied sweetness, featuring vibrant notes of dark cherry, red fruits, and tropical fruit. Its flavor unfolds with balance and depth—lively yet profound—as if the inner strength of the Chandragiri variety has finally been fully awakened.

This highly technical lot exemplifies how a local cultivar can reach world-class standards when approached with understanding, innovation, and precision.

HEMAVATHI RT – IOP 2: A Breakthrough Where Identity Meets Fermentation Technique

Also from Ratnagiri Estate, Hemavathi RT – IOP 2 is another standout lot that redefines the potential of indigenous coffee varieties through modern processing approaches. Traditionally known for its rustic, earthy flavor, the Hemavathi variety now reveals a new dimension of complexity through Aerobic Fermentation – Hydro Honey Process.

In this method, the coffee undergoes aerobic fermentation in a humidity-controlled environment using water (hydro-controlled). This setup allows for the natural enzymatic activity to flourish while precisely managing the fermentation rate—resulting in clean, balanced, and distinctly articulated flavors. The coffee is then processed using the Honey method, where part of the mucilage is retained to enhance natural sweetness and create a silky, smooth mouthfeel.

Thanks to this meticulous process, the flavor structure of Ratnagiri Estate coffee blooms with clarity and nuance. The profile flows like a summer interlude—opening with gentle white florals, followed by ripe pineapple notes, and ending with soft molasses sweetness lingering on the tongue. The flavor unfolds in smooth, captivating layers that invite the drinker to pause and savor each subtle shift.

Harvested in the 2025 season, Hemavathi RT – IOP 2 is proof that a local cultivar can confidently step into the world of Specialty Coffee—rooted in its identity, yet elevated through dedication and thoughtful investment from the producers.
